This super easy grilled shrimp recipe with garlic butter is a family favorite and a win-win for busy weeknights!

Ingredients

  • 1 1/2 lbs jumbo shrimp, tails on, peeled and deveined (weight after peeled)
  • kosher salt and fresh pepper to taste
  • 2 tablespoons salted butter or dairy-free butter
  • 1 large garlic clove, grated, minced or through a garlic press
  • 1/4 teaspoon sweet paprika
  • 1 lemon, sliced into wedges
  • chopped parsley, for garnish

Directions

  1. If using wooden skewers, soak them in water at least 20 minutes.
  2. Season the shrimp with salt and pepper.
  3. Heat the grill over medium heat until hot, then clean and oil the grates.
  4. Meanwhile melt butter in a small skillet over medium-low heat. Add garlic and cook on low heat until  fragrant but not browned, about 1 to 2 minutes. Add the paprika and remove from heat.
  5. Thread the shrimp onto the skewers and place on the prepared grill and cook until shrimp turns pink on the bottom, about 2 to 3 minutes; turn and continue cooking until shrimp is opaque and cooked through, about 2 minutes. Transfer to a platter and Brush the butter over the shrimp skewers.
  6. Garnish with parsley and serve with lemon wedges.
