Turn the heat up to medium, then use tongs to place the chicken breasts on the grill. If using a charcoal grill, you can gauge the temperature by holding your hand five inches above the cooking grate. If you can keep it there comfortably for four to six seconds, it’s at medium heat.

Ingredients

  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1-1/2 teaspoons lemon juice
  • 1/2 teaspoon lemon-pepper seasoning
  • 4 boneless skinless chicken breast halves (6 ounces each)

Directions

  1. In a large resealable plastic bag, combine the vinegar, oil, lemon juice and lemon-pepper; add chicken. Seal bag and turn to coat; refrigerate for 30 minutes.
  2. Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 170°.
