In a large skillet over medium heat, cook pork in oil until meat is no longer pink, 2-3 minutes on each side. Remove and keep warm.

- 1/2 pound pork tenderloin
- 2 tablespoons seasoned bread crumbs
- 1 tablespoon grated Parmesan cheese
- 1/4 teaspoon salt
- Dash pepper
- 2 teaspoons canola oil
- 1/4 cup sliced onion
- 1 garlic clove, minced
Directions
- Cut pork into 4 slices; flatten to 1/4-in. thickness. In a large shallow dish, combine the bread crumbs, cheese, salt and pepper. Add pork, 1 slice at a time, and turn to coat.

- Add onion to the pan; cook and stir until tender. Add garlic, cook 1 minute longer. Serve with pork
