red beet salad

Dinner
This pink-hued red beet salad made with cilantro and carrots is delicious and a great alternative to potato salad!

Ingredients

  • 2 large beets, washed and stems cut off
  • 1 cup carrots, peeled and cooked
  • 1 tbsp cilantro, chopped
  • 1 tbsp diced onion
  • 2 tbsp light mayonnaise
  • salt and pepper
     

Directions

  1. Boil beets in water until soft, about 50 minutes.
  2. Peel and cut into small 1/2" cubes.
  3. Cook carrots until tender and cut into bite size cubes.
  4. Combine diced onion, carrots, beets, mayonnaise, cilantro, salt and pepper.
